Recipe for lemon tiramisu that everyone should try.


Lemon tiramisu is a light and vibrant dessert that will become your new favorite alternative to the classic version. Without a drop of coffee or alcohol, with a delicate creamy filling, sweet-sour curd, and the fresh aroma of citrus — it is perfect for summer, holidays, and special moments.

You will need (for the curd):
- lemon juice — 150 ml;
- sugar — 100 g;
- eggs — 3 pcs;
- potato starch — 15 g;
- lemon zest — to taste;
- butter — 75 g.
For soaking:
- lemon juice — 100 ml;
- sugar — 100 g;
- water — 100 ml.
For the cream:
- mascarpone cheese — 250 g;
- powdered sugar — 70 g;
- heavy cream 33% — 250 ml.
Additionally:
- savoiardi cookies — 200 g.
Cooking method
Prepare the lemon curd. Cut the lemons, scoop out the pulp, and blend it. Strain through a sieve to obtain juice.

Add the juice, sugar, eggs, starch, zest, and butter to a saucepan. Cook over medium heat until thickened, stirring constantly. Let cool.

Make the soaking syrup. Pour lemon juice and water into a saucepan, add sugar. Bring to a boil and remove from heat. Let cool.

Whip the cream. Whip the chilled heavy cream until stiff peaks form. Add mascarpone and powdered sugar, whip until thick cream forms.

Assemble the tiramisu. Dip the cookies in the syrup for a second.

Place a layer in the dish, spread half of the cream on top. Then all the lemon curd. Then another layer of cookies and the remaining cream on top.

Cover with plastic wrap and refrigerate for at least 4 hours. Before serving, garnish with lemon zest.
