Here’s how to cook buckwheat — dinner #1, better than cutlets.


This recipe shows how buckwheat can become the star of the kitchen. Combined with tender chicken mince and a spicy tomato sauce, it results in an extraordinarily delicious and juicy dinner. You will need:
- buckwheat — 1 cup;
- water — 2 cups;
- salt — a pinch;
- chicken mince — 500-600 g;
- onion — 2 pcs;
- eggs — 2 pcs;
- spices — salt, black pepper, khmeli-suneli — 1 tsp, curry — 1 tsp;
- flour — for breading;
- oil — for frying.
For the sauce:
- carrots — 2 pcs;
- tomato paste — 2-3 tbsp;
- water — 1 cup;
- sugar — 1 tbsp;
- salt, pepper — to taste;
- oil — for frying.
Cooking method
Rinse the buckwheat, cover with water, add salt, and cook until tender. Let it cool.

Add the buckwheat, finely chopped onion, eggs, and spices to the mince. Mix the filling well. Form cutlets and roll in flour.

Fry on both sides in a pan with oil until golden brown.

For the sauce: fry the onion until soft, add grated carrot, then tomato paste, sugar, spices, and water. Stir, bring to a boil.

Transfer the cutlets to the sauce, simmer under the lid for 10-15 minutes, periodically turning and spooning sauce over them. Serve hot, with herbs or vegetables.
